Many folks who camp or live in vans, buses, or RVs tend to cook basic meals. It makes sense because there is not much room in the pantry or the fridge, and no one likes doing dishes in a tiny sink. Forget’s goal is to show others that many recipes from around the world do not require a big kitchen or fancy equipment. He believes a lot of the best food is made very simply.

The variety of food in The Buslife Kitchen cookbook includes Italian, Vietnamese, Mexican, Japanese, French, Thai, Costa Rican, Vegan and Forget family recipes. Alongside tantalizing color photographs, this global cookbook contains recipes for breakfast, lunch, dinner, and dessert, including:

  • Grandma’s Impossible Pie – the “impossible” part of the name refers to how it must be impossible for such an easy pie to be so dang good

“I wanted to create a book that would show people some of the spectacular food they can cook in their tiny kitchen. I want to help these folks broaden their culinary horizons so that they can eat better and also to help them connect with other people around them,” explains Forget.

Food is a universal connection point. Sharing food is the most basic and ubiquitous form of altruism and is often the first way that we meet new groups of people and new cultures. By writing this book, full of global recipes, Forget hopes to open the door for people to feel curious about new cultures and cuisines and also to give them an excuse to invite their neighbors over to share a delicious meal that they cooked up.

A.J. Forget is a modern nomad, living out of a 90-square-foot bus named Sweet Bea and traveling across the United States full time. In the autumn of 2017, Forget left a career as a wildland firefighter in order to pursue his other passions of cooking, travel, and writing. He is a self-taught chef, creating gourmet fare in his tiny kitchen with a three-burner stove and no oven.
